Flia is a traditional layered pastry particularly associated with the Roma communities originating from Kosovo, as well as with Albanian cuisine and Roma communities living in Serbia. The dish is commonly prepared for family gatherings, celebrations, and important social occasions because its preparation requires time, cooperation, and patience.

The circular shape of Flia symbolizes the Sun, while the radiating layers resemble sunbeams, reflecting ancient associations with fertility, warmth, prosperity, and communal life. In Albania, Flia is celebrated as an important element of traditional cuisine and cultural identity, and local festivals dedicated to its preparation are sometimes referred to as „Flia Day“ on March 17.

A unique Romani version of black risotto made with pork intestines, garlic, leek, and spices. In its modern form, it uses food-grade charcoal for the dark color, though traditionally Prekmurje Roma would use blood or blood sausage (krvavica).

Cultural note: This dish is a modern reinterpretation. Traditionally, Prekmurje Roma did not use charcoal; instead, they relied on blood or blood sausage to achieve the dark color. The updated version keeps the striking black appearance while adapting to modern tastes.

A rich, hearty soup made with game meat, smoked bacon, mushrooms, and vegetables. Slow-simmered with cream and spices, it was a festive dish prepared on special occasions.

Cultural note: Game soup was a festive dish, usually cooked when hunters brought home fresh meat. Its rich flavor came from combining game with smoked bacon and seasonal mushrooms.

A classic Romani bread, baked in the oven and often served instead of bread with soups and stews. Simple and rustic, it was once a staple in Romani homes and is now gaining new life at culinary workshops.

Cultural note: The name kotloskri pogauča literally means “bread baked in the oven.” It was a common bread among Romani families until store-bought bread became widespread. Today, it is again valued as a traditional specialty.

A hearty Romani soup made with pork trotters and tails, vegetables, and a touch of vinegar and paprika for sourness. Traditionally cooked over a fire when ingredients were available, it was served with bread or special dumplings called kotloskri pogauča.

Cultural note: When pork was not available, Romani families in Rožički Vrh made a simpler version: boiling water with lard, salt, and garlic, thickened with flour and egg, and served with boiled potatoes. Bread accompanied the soup when available, otherwise potatoes alone.
