Ingredients

  • 1-2 tablespoons oil
  • 60o g thicker pork steaks (e.g. neck or boneless loin)
  • 100 g bacon
  • 1 onion
  • 2 cloves of garlic
  • 3-4 pickles
  • 5 spoons of ajvara
  • 100 ml water
  • salt, pepper, ground chili or cayenne pepper if desired

  1. Wash the pork steaks and pat them dry with paper towels. Season them lightly on both sides with salt and freshly ground pepper.
  2. Cut the bacon into slices. Peel the onion and garlic and cut them into pieces separately. Also cut the cucumbers into pieces.
  3. Heat the oil in a frying pan and fry the seasoned steaks until golden brown on both sides. Remove the steaks from the pan and keep them covered on a warm plate.
  4. Add the bacon and onion to the pan you used to cook the meat in. Fry them, stirring, until the onion turns golden brown, then add the garlic and fry for another minute.
  5. Stir in the chopped cucumbers and ajvar and pour in about 100 ml of water. Scrape the bottom of the pan well with a spatula to remove any caramelized bits that formed during the roasting process. Season with salt and pepper to taste, and add a little ground chili or cayenne pepper if desired. Let the sauce simmer over medium heat for about 10 minutes, or until it thickens. If desired, you can return the grilled steaks to the pan while the sauce is cooking and let them simmer in the sauce for a little longer.
