From the Cauldron to the Soul – Roma Soul Food at the 8th Goulashiad

The Roma Soul Food project was presented at the 8th Goulashiad in Pušča. The location itself made the event especially meaningful: Pušča is the only Roma-majority town in Slovenia, and the gathering was as much a celebration of community as it was of cuisine.

The air was filled with the laughter of families, the warmth of shared traditions, and the unmistakable aroma of Romani-style goulash simmering in large cauldrons. What we brought to the Goulashiad was not just a project presentation, but a celebration of heritage, memory, and flavor.

To place the event in a wider cultural context, here are a few insights into the history and richness of goulash:

  • Rooted in resilience: The origins of goulash date back to 9th-century Hungarian herdsmen (gulyás = herdsman) who prepared meat and vegetables over open fires.
  • Paprika power: Although paprika only arrived in Hungary in the 16th century, it has since become the defining spice of the dish.
  • Roma richness: Romani goulash adapts to what is available — potatoes, peppers, garlic, tomatoes, chicken, lamb, or even game — cooked slowly in cauldrons to draw out deep and comforting flavors.
  • Soul food of Europe: Romani cuisine has often been described as the “soul food of Europe,” carrying with it a legacy of creativity, resilience, and community.

We extend our thanks to everyone in Pušča and beyond who supported the project and joined us in celebrating Roma food culture. With every story told and every recipe shared, we are reminded that food is not only about sustenance but also about connection, history, and belonging.
