Evangelos Polyzos

 “You could only buy sweets, who knew to make sweets back then?”

Mr. Evangelos Polyzos was born and raised in Sofades. His family worked in agriculture and lived in the countryside in makeshift tents, often too poor to have breakfast in the mornings. He fondly recalls the kneaded bread, called berzeme, as a cherished memory. All cooking was done outdoors on a gas stove, and his mother was the sole cook. Today, he enjoys grilling over an open fire, which he considers a “man’s job.” His favorite dish is bean soup.
