Sour Milk Soup (Sutethudeskri zumi)

A simple and refreshing soup made with potatoes, sour milk, and sour cream. Flavored with garlic and caraway seeds, it’s a traditional weekday meal in Romani households.

Ingredients

  • 1.5–2 l water
  • 500 g potatoes
  • 500 ml sour milk (buttermilk or kefir can be used as a substitute)
  • 200 ml sour cream
  • 2 cloves garlic
  • 50 g plain flour
  • 1 pinch caraway seeds
  • Salt, to taste

Procedure

  1. Peel and dice the potatoes. Cook them in salted water until tender.
  2. In a bowl, whisk together sour milk, sour cream, flour, crushed garlic, and caraway seeds.
  3. Once the potatoes are nearly done, slowly pour the sour milk mixture into the pot, stirring constantly to avoid lumps.
  4. Let the soup simmer gently for a few minutes, until it thickens slightly.
  5. Adjust salt to taste and serve hot.

Croutons (prašeni kruhovi kocki)

  1. Cut 3–4 slices of bread into small cubes.
  2. Heat 2 tablespoons of oil or lard in a pan.
  3. Add bread cubes and fry until golden and crispy.
  4. Drain on paper towels and serve with the soup.
