“I lighted the stove and on the top I was baking bread for the children”

Sofades, 2025.

Mrs. Ntina, despite not feeling well due to her blood sugar condition, generously shared her well-known bread recipe, a practice deeply tied to her family’s everyday life. She described how she mixes yeast, water, flour, salt and a little milk, lets the dough rest, and then shapes it into loaves. From the same dough, she also rolls out very thin sheets (almost like tortillas) which she prepares as simple snacks for the children, filled with cheese or softened with milk. Throughout the interview, she insisted on the importance of homemade food for children, repeating that this is the only way a child can truly grow well. Her emphasis on cooking for her family revealed not only her culinary skill but also the deep sense of responsibility and care that she associates with feeding her household.
